SUMMARY:Stirling Distillery
DESCRIPTION:Some couples celebrate their 26th wedding anniversary with a city break\, a romantic meal or a carefully-chosen gift.  June and Cameron McCann decided to go for something different and on October 28th 2015 they distilled their very first bottle of Stirling Gin. \nOriginally distilled in a 2.4 litre copper still called Jinty\, our small batch craft gin proved so popular that a bigger still was soon needed. Subsequently Flora arrived on the scene – named after June’s mother – producing 170 bottles per run. From these humble beginnings\, Stirling Gin has grown into a nationally-recognised spirit. We are a small family-run distillery creating hand crafted gin and whisky in the historic ‘Old Smiddy’ building. Our products celebrate the rich history and folklore of Stirling. \nSample our award-winning nettle-based classic gin\, try our independent whisky range\, or indulge in our Bloody Scotland cocktail designed for the annual Crime Writing Festival.

SUMMARY:Slieve League and Triona Donegal Tweed Centre
DESCRIPTION:Slieve League is almost three times the height of its Clare cousins\, the Cliffs of Moher and whilst standing at the viewing point on the Cliff an amazing sea vista and landscape opens up before your eyes. From this point you can see across Donegal Bay to neighboring counties Leitrim\, Sligo and Mayo and when looking out to the west the view is of the vast Atlantic ocean as far as the eye can see. From the North West you will be able to see Rathlin O’Byrne Island and Glencolmcille. At the base of the Cliffs you need to look out for the ‘Giants Desk and Chair’ which is a key part of history. \nIn the midst of Ardara’s rich history as a hub for handwoven Donegal Tweeds\, the echoes of tradition faced a formidable challenge in the 1960s. Modern machinery threatened the very fabric of our indigenous industry. It was in this backdrop of change that Denis Mulhern\, a fifth-generation hand weaver\, emerged as a torchbearer of tradition. In the aftermath of the industry’s decline\, Triona was born\, a small bespoke tweed company founded on the principles of resilience and love for craftsmanship.

SUMMARY:Glengoyne Distillery & Rosebank Distillery
DESCRIPTION:Glengoyne Distillery\, founded in 1833\, is located near Dumgoyne\, Scotland\, uniquely positioned on the border between the Highlands and Lowlands. Known for its unpeated single malt Scotch whisky\, Glengoyne emphasizes slow distillation and the use of air-dried barley. The distillery operates with a fascinating duality: distillation occurs in the Highlands\, while maturation takes place in the Lowlands. Its whiskies are celebrated for their smooth\, rich flavor profile\, featuring notes of fruit\, toffee\, and spice. \nRosebank Distillery\, situated in Falkirk\, Scotland\, has a rich history dating back to the 1840s. Despite its closure in 1993\, Rosebank remains legendary for its triple-distilled Lowland single malt Scotch whisky\, renowned for its light\, floral\, and delicate character. Often hailed as the “King of the Lowlands\,” the distillery is now being revitalized by Ian Macleod Distillers\, with a focus on restoring its historic quality and craftsmanship.

SUMMARY:Uilebheist Distillery
DESCRIPTION:For over two decades\, we had a vision. A vision to create the finest sustainable\, artisan and\, most importantly\, delicious craft beers and whiskies. \nFueled by the flourishing rise of craft brewing and distilling movements of the ‘90s and noughties\, our vision finally came to life in 2023 when we opened the doors at the Uile-bheist Distillery. Nestled directly on the banks of the River Ness\, our distillery site holds great significance as the birthplace of the mythical legend\, Loch Ness Monster (Uile-bheist Loch Ness). \nIt is here that the first recorded sighting of this infamous beast took place. Legend says that in 565 AD\, Saint Columba banished a ‘Water monster’ back into the river\, where he saw him attacking one of his disciples. Celebrating this\, we wanted Uile-bheist to be a distillery that would protect the landscape that Scotland’s greatest myths and legends live on. By building a sustainable energy centre\, our ‘brewstillery’ has been described as ‘exemplary’ in its practices.
